Fructose CAS#57-48-7

1.Naturally Occurring Simple Sugar — Fructose is a naturally-occurring monosaccharide present in fruits and constitutes an important component of dietary carbohydrates.

2.Key Source of Dietary Sweetness — It is widely ingested via common sweeteners including sucrose and highfructose corn syrup (HFCS), serving as a primary source of sweetness within modern diets.

3.Readily Digestible Sugar Form — Upon digestion, sucrose undergoes enzymatic cleavage into one fructose molecule and one glucose molecule, enabling efficient absorption and metabolism.

4.Versatile Composition in Sweetening Systems — High-fructose corn syrup (e.g., HFCS-55) consists of a balanced blend of fructose, glucose and oligosaccharides, delivering flexible sweetness profiles for food and beverage formulations.

Product Description

Fructose consumption has risen substantially over recent decades, a trend linked to the increasing prevalence of metabolic disorders. As a naturally occurring monosaccharide, fructose is abundantly found in fruits. In Western dietary patterns, sucrose (table sugar) and high-fructose corn syrup (HFCS) serve as the primary dietary sources of fructose.

During digestion, sucrose is enzymatically hydrolyzed into one molecule of fructose and one molecule of glucose. In comparison, HFCS consists of free fructose and glucose in variable ratios. HFCS-55, one of the most prevalent variants utilized in the United States, is composed of approximately 55% fructose, 42% glucose, and 3% oligosaccharides, rendering it a highly popular sweetener for beverage production.

Product Application

Fructose is a naturally-occurring monosaccharide sweetener present in fruits and honey. It may be manufactured via enzymatic inversion of sucrose with invertase, or through the isomerization of corn syrup.

Featuring a relative sweetness of roughly 130-180 versus sucrose (where sucrose is assigned a value of 100), fructose exhibits high water-solubility and is extensively applied as a sweetening agent. In baked goods, it reacts with amino acids to deliver favourable browning effects.

Fructose is also widely employed as a nutritive sweetener for lowcalorie beverages. It is sometimes known as levulose or fruit sugar.
