Palatinose is an isomer of sucrose produced from sucrose through enzymatic conversion and refinement using α-glucosyltransferase. It is a sweetener developed through biotechnology and enzyme engineering that modifies the properties of sucrose. As a natural nutritional sugar, it helps reduce the negative effects associated with excessive sucrose consumption.
Also known as isomaltulose, Palatinose is a disaccharide composed of glucose and fructose linked via an α-1,6 bond. It is formed when glucosyltransferase rearranges the original α-1,2 linkage between glucose and fructose in sucrose into an α-1,6 linkage. Structurally, it differs from sucrose only in the bonding position of glucose and fructose, making it a true sucrose isomer.
Palatinose appears as white, odorless crystals with a molecular weight of 360.32 and contains one mole of crystal water. It has a melting point of 124°C, a specific rotation of [α]20 97.2, is non- or weakly hygroscopic, and exhibits lower solubility and viscosity compared to sucrose. It is also acid-resistant. Currently, it is produced from sucrose using immobilized cell (enzyme) biotechnological methods.
